A different pecan pie that isn’t as “gooey” as some.
I like this one because it is a little more dry than most.
Ingredients:
2/3 C. Corn Syrup
1/3 C. Sugar
2 Eggs-Beaten
2 TBS Butter (melted)
2/3 C. Oatmeal (Quaker Oats)
1 Cup Pecan halves…(I had huge pecans this time, I should have cut in half).
Combine 2/3- C. Corn Syrup, 1/3- C. Sugar, 2- TBL Melted Butter, 2- Eggs
…blend well
Stir in 1- C. Pecans and 2/3- C. Oatmeal.
Bake @ 350º For about 50min-1 hour. (as you can see, I like mine very brown.)
Optional: I have put dried blueberries in this also. It is very good…about a 1/2 cup.
If it starts getting too brown, cover edges with foil. (I use a 13 X 13 (approx) piece of foil…cut out a square so the filling is still open but crust is covered.)
