My sister Lori is from Southern Arkansas and she is a great cook. She recently put this on her facebook and I had to put it on here. Some people don’t know what Fried Okra is. I have to tell you, it’s wonderful. It’s mainly a southern dish, I think. I have heard a lot of people North of Oklahoma that have never eaten it and alot have never even heard of it. It’s an easy thing to grow in the garden. Alot of people pickle it, too.
LOVE fried okra. Some ‘northern’ folks think it is a weed. WEll, if it is, it is the best tasting weed there is. I wash, cut, and freeze it to use through the winter. It makes any stew MUCH more flavorful. If you don’t like the texture, just leave it in the stew for a couple of hours and stir it, the okra will break into little pieces and you won’t know it is there EXCEPT for the added flavor. You can also fry the frozen okra. It is not as good as fresh but a lot better than what you buy in the store. Hmmm…I think I will fry some this weekend.
